Matar Pulao!!!
Step-by-step recipe:
■ Wash 11/2 cups basmati rice and soak it in water for 20 minutes, drain and keep it aside.
■ Heat 2 tbsp ghee in a pot.
■ Add whole spices (1 bay leaf, 4 green cardamoms, 1 black cardamom, 1 inch cinnamon stick, 3 cloves and 10-12 black peppers).
• Add 1/2 tsp cumin seeds. Sauté until they turn fragrant.
■ Add 1/3 cup cashew nuts. Fry for few seconds until it changes colour.
■ Add 1 tbsp grated ginger and 3-4 chopped green chillies. Sauté until raw smell goes away.
■ Add 1 cup green peas and sauté for a minute.
■ Add soaked rice and gently mix everything.
■ Add salt and 1/2 tsp garam masala powder. Sauté for a minute.
• Add 2 1/2 cups of water and mix.
■ Add lemon juice.
■ Cover the pot with it's lid.
■ Cook until the water is completely absorbed.
■ Open the lid and gently fluff the rice.
■ Garnish with some chopped coriander
